Pale straw with a green tint. The lift is bright and citrus-led — grapefruit pith, gooseberry, a wisp of cut grass — with a cooler mineral note running underneath, like wet stone.
Taut and dry. Citrus carries through the front; the mid-palate is mineral, almost saline, with a hint of green apple. The lees ageing shows as a soft creaminess that lifts the texture without softening the line.
Clean, brisk, and lingering. The citrus persists; the minerality holds. A wine that asks you to drink the next sip cold.
The classic Cape pairing: West Coast oysters, Atlantic linefish, a goat's-cheese salad. Equally at home with a Thai green curry or sushi.
The 2025 Sauvignon Blanc season was a textbook cool one. A wet July gave the vines the reserves they needed; a mild summer kept acidity high through ripening.
We picked at first light on a Tuesday in mid-January, the grapes cold from a 9°C night. Cold-fermented in stainless steel and bottled within four months — a wine made for now, not for waiting.
